This summer I made a batch of macarons I felt was better suited for an autumn day, so I have saved the recipe until now. These macarons came to be because I received a bag of saffron from a friend who had been traveling in Jordan. She suggested I could use it as an ingredient in a macaron. I decided to combine the saffron with some honey, a combination I have tasted before, in an ice cream actually. The macarons turned out bought sweet and spicy, and I would say they are a great alternative to macarons with “regular ” flavors.
Macarons with Saffron and Honey
1 batch macarons made from the base recipe
Meringue Buttercream with Honey and Saffron
– 1 egg white
– 0.75 dl (1/3 cup) sugar
– 60 g (3,5 tablespoons) butter
– 1/2 teaspoon saffron
– 1 tablespoon honey
Follow the base recipe making the macarons. Add yellow food coloring to the mixture while beating the egg whites. Use a concentrated food coloring for the best result. Bake and cool the macarons.
Beat egg whites and sugar until it turns into stiff meringue peaks. (If you live in a country where you should be careful eating raw eggs, you should heat the egg whites before you beat them. Place both sugar and egg whites in the heat-proof bowl and set the bowl over a pan of gently simmering water. Whisk until sugar has dissolved and egg whites have turned hot, before you beat them.)
Add the butter to the meringue, little by little while whisking. Whisk for long between each time you add butter, and if the mixture separates, continue whisking. Whisk for a couple of minutes, and the problem should fix itself. Add the saffron and honey to the buttercream. If it is threads of saffron you have, you should crush them finely before adding them.
Put the buttercream a couple of minutes in the fridge before you start sandwich the macarons. Use a teaspoon, a knife or a piping bag, whichever you prefer: turn a macaron upside down, add 1/2-1 teaspoon of buttercream, and press the bottom of another macaron on top of it.
Place the macarons on a serving platter, serve them and enjoy!
Tip! If you want to decorate the macarons , you can sprinkle them with few saffron threads before serving .
